Courgetti

Courgetti is starting to be common place in our supermarket and restaurants.

Its simple to make providing you have a spiralizer.

I bought something relatively inexpensive which I use a lot.

They don’t have to be expensive, but I would stay clear of plastic ones.



This is one of the many recipes I created when I followed the 90 Day Plan by The Body Coach. Simply use your plans ingredient amounts instead of those shown in the recipe. There are 220 Create Your Own (CYO) friendly recipes in my app and on this website.

Ingredients for 1 serving

149 g courgette

Method

  • Resist topping and tailing the courgette as you can use these ends as the anchor point for the spiralizer.
  • Start to turn the handle applying some pressure and you’ll start to get spaghetti style ribbons.
  • The centre of the courgette can be a little mushy but that’s fine.
  • Repeat until you have used all of your courgettes.

Recipe Notes

  • Use firm courgettes for the best results.
  • Here are some different serving suggestions.
  • Grate the zest of half a lemon on top and eat raw.
  • Grate the zest of half a lime on top, add the juice of half a lime, sprinkle with chopped spring onion and coriander and mix. Again eat raw, the lime juice partially cooks the courgette.
  • Toss courgetti strands along with grated lemon zest in a warm non stick pan. Using tongs, move the strands around the pan to warm it through and infuse the courgetti with the oils from the lemon zest.
