Chilli chicken curry stir fry

I’ve noticed that I seem to go through phases with food, and at the moment I seem to be in a spicy stir fry phase which I’m thoroughly enjoying!

My metabolism must be on fire with the amount of chillies I’m getting through!



This is one of the many recipes I created when I followed the 90 Day Plan by The Body Coach. Simply use your plans ingredient amounts instead of those shown in the recipe. There are 220 Create Your Own (CYO) friendly recipes in my app and on this website.

Ingredients for 1 serving

267 g chicken breast, cut into fillet size pieces
95 g babycorn
116 g mushrooms, sliced
1-2 tsp medium curry powder
6 g coconut oil
1 garlic clove, chopped or crushed
1.5 chilli, sliced, seeds or no seeds up to you!
24 g sesame seeds
48 ml sweet chilli sauce
149 g broccoli made into broccoli rice
salt and pepper

Method

  • Take a medium frying pan and pop it onto the heat along with the coconut oil and chicken.
  • Stir fry the chicken for a few minutes to colour and add the mushrooms  and babycorn to the pan.
  • Stir fry on a high heat for a few minutes before adding the garlic, chillies and curry powder.
  • Give everything a good stir and if you feel the pan is a little dry add a couple of tablespoons of water.
  • After a few minutes the chicken should be cooked (it will be firm to the touch when ready) and the vegetables will have softened.
  • Take this off the heat and take another frying pan and add it to the heat to warm the broccoli rice through.
  • If you’re feeling crazy you could more chopped chillies.
  • After a couple of minutes remove this from the heat and pop it on a plate.
  • Add the chicken stir fry and top with sesame seeds and a dollop of sweet chilli sauce.

Recipe Notes

  • For those on 2018 BC plans, baby corn has been approved for used in place of carrots.
  • For anyone following older BC plans, baby corn has been approved for use in place of courgettes.
  • For those on 2018 BC plans, sweet chilli sauce is a swap for other side sauces provided you choose one with equivalent macros.
